The Super Emeralds actually use the very same Blue Sphere Special Stage designes as the ones from Sonic & Knuckles on its own. Some of the stages are quite difficult, but after you find the layout for the stage, it actually becomes quite easy.

The Super Emeralds only appear in Sonic 3 & Knuckles. They have not yet made an appearance within the Sonic series since that game.

When you finish Sonic 1, and you don't get all emeralds, for example, you only get three, Robotnik will appears with the other four. Did anyone get the seven emeralds?

The Super Emeralds only appeared in Sonic 3 & Knuckles. So, it's not in any other games. I got both all chaos emeralds and super emeralds in Sonic 3 & Knuckles many times. It's not that difficult. I also got all seven chaos emeralds in Sonic 3D Blast.
